"Just open it and let it breathe" — it's advice you hear all the time, but here's the reality: simply pulling the cork and leaving the bottle standing does very little. The neck of a wine bottle exposes only about 3 cm² of surface area to the air — that's barely enough for meaningful oxidation.

For young, tannic reds (1–5 years old) — Cabernet Sauvignon, Nebbiolo, Malbec — opening alone won't cut it. You need a decanter with a wide base that exposes far more wine surface to the air. Give them 1–2 hours in a carafe. If that's not possible, opening 2–3 hours ahead provides a modest benefit.

Middle-aged reds (5–10 years) need less time. Their tannins have already softened with bottle age, and 30 minutes to 1 hour of air is usually enough to bring out spice, leather, and earthy notes.

Old wines (15+ years) are the opposite — they need protection from air, not exposure to it. Their aromas, developed over decades in a near-airless environment, are extraordinarily fragile. The legendary winemaker Aubert de Villaine of Domaine de la Romanée-Conti advises drinking old Burgundy within minutes of opening. If you open an old bottle two hours early, you may return to find the wine has already passed its peak.

Light, fruity reds — Beaujolais, young Pinot Noir, Valpolicella — don't need advance opening at all. Their appeal is freshness and immediacy.

The best advice: pour a small taste right after opening. If it's tight and tannic, decant it. If it's already singing, just pour and enjoy.
