How to quickly chill a bottle of wine?

We've all been there: guests arriving, wine at room temperature, and no time. Here's the physics-backed hack that professional sommeliers actually use.

Fill a bucket or large bowl two-thirds with ice, add cold water until it reaches the top of the ice, and stir in a tablespoon of salt. Submerge the bottle and spin it gently a few times. The water makes full contact with the bottle's surface (unlike air in a fridge, which is a poor conductor), and the salt drops the water temperature below 0 °C without it freezing. Result: your bottle goes from room temperature to perfectly chilled in about 15 minutes.

Pre-frozen sleeves (like "Rapid Ice" wraps) are great if you plan ahead — they chill a bottle in about 5 minutes. Keep one in the freezer at all times and you'll never be caught off guard.

Two things to avoid: never put ice cubes directly in wine (they dilute it and wreck the flavour balance), and never leave a bottle in the freezer for more than 20 minutes without a timer (expansion from freezing can crack glass or push the cork out).
