How to use a wine vacuum pump?

A wine vacuum pump is one of the cheapest and most practical tools for saving an open bottle. The most popular brand is Vacu Vin, but there are plenty of alternatives that work on the same principle.

Here's how to use one step by step: First, push the special rubber stopper firmly into the bottle neck — make sure it's centred. Then place the pump handle on top of the stopper and pump up and down. You'll feel increasing resistance after about 15-20 pumps. Some models click when they've reached maximum vacuum. Gently lift the pump off without disturbing the stopper.

What the pump actually does is remove about 70% of the air from the space above the wine. It doesn't create a perfect vacuum — that would require industrial equipment — but it slows oxidation enough to extend the wine's life by 3-5 extra days. Always store the bottle in the fridge after pumping, even reds. Just take the red out 20 minutes before pouring.

A few tips that make a real difference: the less wine left in the bottle, the more air you need to extract and the less effective the pump becomes. If there's only a glass left, drink it rather than trying to save it. Also, check the rubber stoppers regularly — they wear out after about a year of frequent use and lose their seal.

For serious collectors, gas-based preservation systems (like Coravin) inject argon into the bottle, creating a near-perfect barrier against oxygen. They cost EUR 150-350 but can keep wine fresh for weeks or even months. For casual use, though, a EUR 10-15 vacuum pump does the job brilliantly.
