What is a 'nervous' or 'nervy' wine?

If you have ever tasted a wine that made your mouth tingle with electricity -- not harsh, not sour, but alive -- you have experienced what the French call 'nerveux.' It is one of those tasting terms that does not translate perfectly into English, which is why tasters increasingly borrow it as 'nervy.'

The sensation comes from high natural acidity, specifically tartaric acid (the most stable acid in wine) and sometimes malic acid (green apple sharpness). Nervy wines typically have a low pH, around 2.9-3.2 for whites, which means the acidity is genuinely high, not just perceived.

Cool-climate regions are the natural home of nervy wines. Chablis, with its Kimmeridgian limestone soils and semi-continental climate, produces Chardonnays that are the textbook definition. Sancerre's flinty Sauvignon Blancs, Muscadet's bone-dry Melon de Bourgogne, and dry Rieslings from Alsace or the Mosel all fit the profile.

The key distinction is between 'nervy' and 'just acidic.' A nervy wine has balance -- the acidity is the backbone, but there is fruit, texture, and length to match. It feels energetic, not aggressive. Think of it like a tightrope walker: the tension is what makes it thrilling, not scary.

In English tasting vocabulary, you might see similar concepts described as 'racy,' 'taut,' 'zippy,' 'linear,' or 'focused.' Each captures a slightly different shade of the same idea: a wine driven by its acidity in the most flattering way possible.
