Pétillant naturel, or pét-nat, is the oldest and simplest form of sparkling wine. Unlike Champagne (traditional method with two fermentations), pét-nat uses just one: the wine is bottled while alcoholic fermentation is still underway. The CO2 produced by the yeasts gets trapped in the bottle, creating natural fizz.
This ancestral method predates the Champagne method by several centuries. Records of it exist in Limoux (Languedoc) as early as 1531 — well before Dom Pérignon.
The profile of a pét-nat is distinctive: fine, delicate bubbles (lower pressure than Champagne, about 2-3 bars vs. 5-6), fruity and fresh aromas, natural slight cloudiness (often unfiltered), and moderate alcohol (10-12 %).
Pét-nat has become the poster child of the natural wine movement. Its artisan production (minimal intervention, often organic or biodynamic) and raw 'straight from the tank' character appeal to drinkers seeking authenticity.
