German Riesling: The World's Most Misunderstood Great Wine

Why sommeliers worship Riesling and how to navigate the label confusion

Updated April 2026 | By expertvin — Belgium's Wine Specialist

Ask any Master of Wine, Master Sommelier, or top wine critic what their desert-island grape is, and more will say Riesling than any other variety. Yet the general public still associates German Riesling with cheap, sweet plonk from Blue Nun. The disconnect is staggering. German Riesling produces the most electric, mineral, transparent white wines on the planet — from bone-dry to lusciously sweet, from €8 village wines to €500 Trockenbeerenauslese. This guide bridges the knowledge gap.

Decoding the German Wine Label

The Prädikat system (by ripeness)

Kabinett: Lightest, often off-dry, refreshing, low alcohol (7-9%). Perfect aperitif. Spätlese: Late harvest, richer, can be dry ("trocken") or off-dry. The sweet spot. Auslese: Selected bunches, distinctly sweet or powerfully dry. Beerenauslese (BA): Botrytis-affected, honeyed, rare. Trockenbeerenauslese (TBA): Shriveled botrytis berries, liquid gold, prices to match (€100-500/half bottle). Eiswein: Ice wine, frozen grapes, intense acidity + sweetness. Endangered by climate change.

The critical word: Trocken

"Trocken" = dry. If you want dry German Riesling, look for this word on the label. The VDP (Verband Deutscher Prädikatsweingüter) classifies top estates using a Burgundy-like hierarchy: Gutswein (regional) → Ortswein (village) → Erste Lage (Premier Cru) → Grosse Lage (Grand Cru, marked by "GG" for Grosses Gewächs when dry). Look for "GG" for the best dry German Rieslings.

The Great Regions

Where Riesling excels

Mosel: Steep slate slopes, the most ethereal Rieslings. Low alcohol (7-9%), laser acidity, slate minerality. Joh. Jos. Prüm, Egon Müller, Fritz Haag. Rheingau: Warmer, fuller, more structured. The classic German Riesling region. Schloss Johannisberg (the oldest Riesling estate), Robert Weil, Künstler. Pfalz: The driest, fullest-bodied German Rieslings. Bürklin-Wolf, Christmann, Von Winning. Nahe: The "bridge" between Mosel finesse and Rheingau body. Dönnhoff, Emrich-Schönleber. Rheinhessen: Revolution in progress — once bulk, now home to Keller and Wittmann, two of Germany's greatest estates.

Why Sommeliers Love Riesling

Riesling is the ultimate food wine. Its high acidity cuts through rich and fatty dishes. Its off-dry versions complement spicy Asian cuisine like no other wine. Its sweetness balances salt. Its transparency reveals terroir differences more clearly than any other grape — a Mosel Riesling and a Pfalz Riesling are as different as a Chablis and a Meursault. And its aging potential is extraordinary: great German Riesling improves for 20-50 years, developing petrol, honey, and dried fruit notes of astonishing complexity. All this at prices that start at €8. No wonder the pros are obsessed.

Frequently asked

  • Is German Riesling sweet?

It CAN be, but the majority of fine German Riesling today is dry ("trocken") or off-dry ("feinherb"). The Prädikat designations (Kabinett, Spätlese, etc.) indicate ripeness at harvest, not necessarily sweetness of the finished wine. Look for "trocken" or "GG" (Grosses Gewächs) for dry. When German Riesling IS sweet, it's intentional and magnificent.

  • What is the best German Riesling?

Egon Müller Scharzhofberger (Mosel) for sweet styles — among the most expensive white wines on Earth. Keller G-Max and Wittmann Morstein GG (Rheinhessen) for dry. Dönnhoff Hermannshöhle (Nahe) for balance. For value: Fritz Haag Kabinett (€12-15) is possibly the world's greatest wine bargain.

  • How much does German Riesling cost?

Kabinett: €8-15. Spätlese: €12-25. GG (Grosses Gewächs, dry Grand Cru): €25-60. Top GGs (Keller, Wittmann): €50-150. BA/TBA/Eiswein: €50-500+. The value at the Kabinett and Spätlese level is extraordinary — world-class wine for €10-20. On expertvin.be.

  • What food pairs with German Riesling?

Off-dry Riesling + Thai/Vietnamese/Indian curry = the perfect pairing (sweetness tempers spice, acidity cleanses). Dry Riesling + sushi/sashimi. Kabinett + asparagus (Germany's national pairing). Spätlese + foie gras. Auslese + blue cheese. Riesling is the most versatile food wine in the world.

  • Why does aged Riesling smell like petrol?

TDN (1,1,6-trimethyl-1,2-dihydronaphthalene) develops naturally as Riesling ages. It's considered a positive quality marker — part of the wine's complexity. Some terroirs (warm vintages, low-yielding vines) develop more TDN. German Riesling lovers prize the "petrol" note; beginners find it surprising. Give it time.

  • Where to buy German Riesling in Belgium?

expertvin.be offers curated German Rieslings from Mosel to Pfalz through expertvin. Taste at our wine bars 20hVin (La Hulpe) and La Cave du Lac (Genval).

  • What is VDP and GG?

VDP (Verband Deutscher Prädikatsweingüter) is Germany's association of top estates — the equivalent of a Grand Cru classification. GG (Grosses Gewächs) is a dry wine from a VDP-classified Grand Cru vineyard (Grosse Lage). It's the gold standard for dry German Riesling.
