To check if wine is still good, look at three things: colour (brown-tinged red or amber white signals advanced oxidation), smell (vinegar, wet cardboard, or bruised apple means trouble), and taste (no fruit and a flat finish confirm decline). A wine past its prime isn't harmful — just not enjoyable.
The fastest way to chill a bottle of wine is an ice-water-salt bath: fill a bucket with half ice, half water, add a tablespoon of salt, and your bottle goes from 22 °C to 8 °C in just 15 minutes — versus 2 hours in the fridge or a risky 7 minutes in the freezer.
If the bottle has a natural cork, store it on its side. This keeps the cork moist so it stays expanded and airtight. A dried-out cork shrinks, lets air in, and your wine oxidises. Screw-cap bottles? Store them however you like — upright is fine.
Wine doesn't have an expiration date in the legal sense, but it does have an optimal drinking window. Around 90 % of all wines are made to be enjoyed within 2–5 years of bottling. After that, they won't make you sick — they just gradually lose their flavour and appeal.
Technically you can refreeze wine, but you really shouldn't drink it afterwards. Each freeze-thaw cycle destroys aroma compounds and flattens the texture. If you've thawed wine once, either drink it that day or use it for cooking — that's where frozen wine actually shines.
Insert the rubber stopper into the bottle opening, place the pump on top, and pump up and down until you feel strong resistance or hear a click. That removes about 70% of the air inside, buying your open wine an extra 3-5 days in the fridge. Simple, affordable, and genuinely effective.
It depends enormously on the level of Bordeaux. A basic AOC Bordeaux is best within 3-5 years. A solid Cru Bourgeois peaks between 5-15 years. A top Grand Cru Classé from a great vintage? Easily 20-50 years, sometimes longer. The tannins, acidity, and how you store it make all the difference.
Put the cork back in (or use a vacuum stopper), then straight into the fridge. An open rosé stays enjoyable for 2-3 days — tops. Rosé relies on freshness and fruit, and both fade fast once oxygen gets to work. After day three, it's better off in a vinaigrette than in a glass.
Most white wines don't need aeration — just pour and enjoy. But full-bodied, oak-aged whites like Burgundy Chardonnay or white Bordeaux can genuinely benefit from 15-30 minutes in a decanter. It opens up complex aromas and softens any reductive funk from ageing. Light, aromatic whites? Skip the decanter entirely.
Keep bottles cool (under 25 °C), cushioned, and out of direct sunlight. In summer, never leave wine in a hot car boot — temperatures can hit 60 °C in half an hour, which will cook the wine and push the cork out. Use an insulated bag or cooler box, transport bottles lying flat so they don't roll, and get them into a cool spot as quickly as possible.
Aim for 65-80% humidity, with 70% being the sweet spot. Too dry (below 50%) and corks shrink, letting air in and spoiling the wine. Too humid (above 85%) and you get mould on labels and musty smells — though the wine itself stays fine. A simple hygrometer is all you need to keep track.

A standard case of wine contains 12 bottles of 750 ml, totalling 9 litres. This convention dates back to 19th-century maritime trade, where 12 bottles roughly equalled 2 imperial gallons — the dominant British unit of measure at the time.
A magnum holds 1.5 litres — exactly two standard bottles. It's not just a party format: wine experts consider it the best size for ageing because the ratio of wine to oxygen (entering through the cork) is more favourable. Wines in magnum age more slowly and develop more complexity than the same wine in a regular 75 cl bottle.
The 75 cl bottle became the global standard thanks to 19th-century trade between France and Britain. 75 cl equals one-sixth of an imperial gallon, which meant a Bordeaux barrel of 225 litres divided perfectly into 300 bottles (50 gallons). The EU formalised the format in 1977.
To age wine successfully, you need five things: steady temperature (12-14 °C), proper humidity (65-80%), darkness, no vibration, and minimal odours. And — crucially — you need wine that's actually built for ageing. Most wines are made to be enjoyed young. Only those with strong tannins, high acidity, or significant residual sugar will genuinely improve with time.
The golden rule is matching intensity: light dishes love light wines, bold dishes need bold wines. Dry whites (Chablis, Riesling) shine with fish and seafood, medium reds (Pinot Noir, Merlot) elevate poultry and white meats, and tannic reds (Cabernet Sauvignon, Syrah) stand up to red meats and rich sauces.
